Blogmas Day 4: Christmas Cookies

  I love baking, but I'm more of a cake person than a biscuit person. But I thought I'd take the challenge and try something different. So I attempted to make Christmas cookies.

For the biscuit, I used a simple recipe I found on BBC Food. But the ingredients you need for the biscuits are:

100g sugar

100g butter

1 medium egg

275g flour

1 tsp vanilla extract

I haven't shown all the ingredients that I used to decorate with here, mainly because I baked the biscuits and decorated them the next day, so managed to go to the shop to buy more food colourings.

It was at this point where I needed to roll out the dough that I realised I didn't have a rolling pin in uni, so had to get very creative. In the end I used a oven tray to squish the dough flat before cutting out the shapes. And if I'm honest, who needs the gym when you can just do that instead?!

I decided to do some circle shaped biscuits, and some gingerbread men shaped ones. The idea behind the circle ones being that they could be baubles.

I put them in the oven for 8 minutes before taking them out and leaving them to cool on the side. At this point, I was really impressed that they turned out good. So I knew that the decorating would go badly.

I never usually use water icing, as I use butter icing on my cakes, so trying to work with this was difficult. It accidentally made it too runny, and then to thick. Before finding a consistency that worked better.

In the end, I was very happy with the baubles, but the gingerbread men were a lot harder to decorate. But at the end of the day, it's the taste that matters and they were darn good! And my housemate willingly ate the not so good looking ones, so win-win really!
